School Holiday Treat - Blueberry Ice Cream Floats

I remember having ice-cream soda's as a treat when I was a kid. This version is a little bit healthier with the addition of fruit, sparkling water instead of soda and coconut ice-cream instead of dairy.


Feel free to add kombucha if you like for additional gut benefits. This blueberry syrup can be made ahead of time and kept in the fridge.

2 servings:

  • 1 cup Blueberries (fresh or frozen)

  • 1/4 cup Water

  • 1/4 cup Maple Syrup

  • 2 cups Organic Coconut Ice Cream

  • 3 cups Sparkling Water

  1. In a small pot, simmer the blueberries, water and syrup for about 5 minutes. Remove from heat.

  2. Once cooled, divide the blueberry syrup and ice cream into bowls or glasses. Top with sparkling water, and garnish with extra blueberries (optional). Enjoy immediately!
